Fry the corn tortilla until crispy, then set aside. Dice the salmon fillet into small cubes and dice the cucumber into small cubes. Mix everything together with lemon juice and a pinch of salt. To assemble, spread the chipotle mayonnaise onto the tortilla, top with the salmon aguachile and garnish with coriander and pickled onion.
